IRISH APPLE CAKE

This delicious, moist, apple-packed cake is one of the best Irish desserts and it's not green! For best results, use crisp, tart apples like Granny Smith or Honey Crisp. Use a combination of different apples for varying taste and textures.

WHAT YOU'LL NEED

3 cups flour

2 tsp. baking powder

1/8 tsp. salt

1/4 tsp. cinnamon

1/4 tsp. nutmeg

6 oz. butter, cold, diced

3/4 cup sugar4 large apples, peeled, cored & diced

3/4 cup whole milk

2 eggs

4 tbsp. sugar for sprinkling on top of batter

 

HOW YOU'LL MAKE IT

Preheat oven to 375°.

Grease and flour a 9 inch springform pan.

In a large bowl, sift together flour, baking powder, salt, cinnamon and nutmeg.

Using a pastry cutter or your fingers, cut in the butter until the mixture resembles fine crumbs.

Mix in sugar then toss in diced apples and combine.

In a separate bowl, whisk the eggs and milk together. Add to the apple/flour mixture until just combined being careful not to over mix. Batter will be thick and dough-like.

Spoon batter into prepared pan and flatten top with a spatula. Sprinkle sugar over top of batter. Bake 50 - 55 minutes. Test the center for doneness using a toothpick or knife. Be sure it comes out clean. The top should be a nice, golden brown.

Cool completely before removing from pan.

Serve with vanilla ice cream, whipped cream or both. Also great with a cup of coffee, latte or tea!
