A delicious, healthy, and simple twist on traditional cranberry sauce. Serve as a side dish or as an appetizer served over cream cheese and crackers.
WHAT YOU'LL NEED
12 oz. fresh cranberries
1/4 cup scallions, sliced thin
2 jalapeño peppers, seeded and minced
2 tbsp. fresh ginger, peeled and finely grated
1/2 cup sugar
1 lime or lemon, zested and juiced
1/4 cup walnuts, finely chopped (optional)
1/4 cup fresh cilantro, minced (optional)
HOW YOU'LL MAKE IT
Rinse, drain and discard soft or bruised cranberries.
Place remaining cranberries in a food processor or blender. Pulse until coarsely chopped then place in a large bowl.
Add scallions, jalapeños, ginger, walnuts and cilantro. Stir to combine.
Sprinkle sugar over salsa and mix well. Pour lime juice over mixture and stir. Top with lime zest.
Cover and refrigerate at least an hour to allow flavors to develop.
