WHAT YOU'LL NEED
For the veggie burger (makes about 10)
4 large sweet potatoes
1 bag boil in a bag brown rice
2 cans of black beans
1 cup of whole oats
1 small onion
2 teaspoons of cumin
1 teaspoon garlic powder
1 teaspoon turmeric
1 teaspoon chili powder
1 teaspoon cayenne pepper
Salt & pepper to taste
HOW YOU'LL MAKE IT
Preheat your oven to 425F, cut your sweet potatoes in half,
the long way and roast for about 45-50 minutes.
Mash together your beans, cooked brown rice, oats, sweet potatoes,
a small onion (diced), and all the seasonings. Once fully mixed together, form your patties and put on a baking sheet lined with parchment paper. Bake at 425 for about 15 minutes or so. Serve with roasted red pepper hummus and sriracha!
